Tu B’Shevat: Tofu Chocolate Pudding

How amazing is Tu B’Shevat, a New Year for Trees?! I love that Judaism has a holiday that pre-dates the secular Earth Day by several thousand years and that it celebrates the sacredness of nature, including trees, of which we are fully dependent for our survival. We are part of nature and our fully interdependent on trees and oceans for the air that we breathe (“the “Earth’s lungs”). In a moment where there’s major rollbacks of regulations to ensure clean air that protects human health, it’s especially meaningful to use this holiday to advocate for clean, safe air. To celebrate the holiday, it’s common to host a seder during which you eat lots of fruits, nuts and seeds from trees. My tofu pudding is only mildly sweet and can be a great dessert with a “toppings” bar to enjoy at a Tu B’Shevat celebration. Pre-blended

Tofu Chocolate Pudding

Ingredients:
1 package soft tofu, water drained
2. tbsp maple syrup (add more if you want it very sweet)
1 heaping tbsp cacao powder
1 tsp vanilla
toppings: I used shredded coconut, hemp seeds and chopped almonds. Other ideas: pomegranate seeds, chopped walnuts or pecans, lemon zest, chopped apples, cacao nibs

Preparation:
1. Drain the tofu
2. Put tofu, maple syrup, cacao and vanilla in a blender
3. Blend until smooth
4. Pour into a container and refrigerate a minimum of 2 hours but ideally at least 8.
5. Remove from fridge, put into individual bowls and top with an array of nuts, fruits, seeds
