Berry Tahini Break-Fast Smoothie

This is a quick post to share a really easy, nutritious post-fast dish. Personally, I don’t like to go to “all you can eat” break-fast meals filled with bagels, kugel (even if vegan), raw salads, desserts, etc. after a day without food and water. I need easily digestible foods that are nourishing and gentle on my body. I’m sharing a recipe for an easy berry-tahini smoothie that can easily be made within minutes of the fast ending. It is a thick smoothie/bowl that is meant to be eaten with a spoon (again-this is better for digestion). The tahini adds creaminess and fat while the tofu is good for protein. Break-fast Berry Tahini Smoothie
Ingredients:

1 cup assortment of berries (I prefer fresh berries because I don’t like icy cold foods)
1/4 tahini
1/4 cup raw tofu (any consistency is fine but the firmer ones will make the smoothie thicker)
1/2 soy milk (coconut cream or milk is a delicious, thickening option)
1 tsp goji berries
1/2 tbsp almonds (or any nuts)
1-2 chopped fresh strawberries or a small handful of blueberries, raspberries, etc.
drizzle each of pomegranate molasses and tahini
optional: 1-2 tbsp of maple syrup if you want it to be sweet

Preparation:
1. Pour the berries, tahini, tofu, and soy milk into a blender. Blend until smooth. If it’s too thick, add a bit more soy milk though I actually like my smoothies with some chunks of unprocessed berries, tofu. Pour into a bowl or large mug
2. Chop the strawberries and nuts and put on top.
3. Add goji berries, pomegranate molasses and tahini to the top of the smoothie.
